Coffee from Master Mauricio

The red bourbon variety is processed using extended fermentation techniques and then dried on raised African beds. This process ensures a cleaner and more balanced flavour. After the drying process, the coffee is dehulled by peeling, using rainwater as a source of energy.

Farmer Mauricio Salaverria puts his expertise, time and energy into growing and processing a wide range of coffee varieties. Thanks to his meticulous work and dedication, his coffee was ranked among the best in the prestigious Cup of Excellence 2015 competition.

The Divisadero farm is located at an altitude of 1,550 metres and boasts not only a beautiful location but also exceptionally high quality soil. The owner of the farm, Mauricio, pays great attention to organic coffee processing, which is a key element of our collaboration. At the same time, he emphasises the manual harvesting of the coffee cherries, which takes place only when they reach optimum ripeness. This careful approach ensures the exceptional quality and unique taste of the resulting coffee.
